Our Honey
High grade, cold extracted, Manuka and Leatherwood honey – fresh from the Tasmanian wilderness
Mat can be found chasing adventures in the bush, always curious about the natural world.
Beekeeping –
a family tradition
Winskill's Bees founder Mat was drawn to beekeeping from a young age, taught by his uncle Bill, a beekeeper with decades of experience and a love for nature. Growing up Mat would accompany Bill on his outdoor adventures, where Bill shared the special, secret locations of his hives. Years later and still feeling the pull of beekeeping, Mat established Winskill's Bees as a means to share his uniquely Tasmanian honey – a pure expression of the Tasmanian wilderness.
The pristine Tarkine region lends itself to the production of our high grade, active Manuka honey.
Manuka Honey
Well known for its medicinal and healing benefits, Manuka honey has antibacterial, anti-fungal and anti-inflammatory properties. It can alleviate upper respiratory infections, support the healing of wounds and relieve irritable bowel syndrome.
Manuka honey has a high MGO (methylglyoxal) concentration – a chemical compound with antiseptic effects. Our MGO 450+ Manuka Honey is produced by bees collecting from the Tasmanian Tea Tree (Leptospermum Scoparium). Situated at a high altitude on the wild and windy west coast, the location of our hives has over three meters of rainfall each year and is covered in snow during winter. As the Tasmanian Tea Tree only flowers for one month we have a small window of time each season to collect this unique and magical honey.
Leatherwood honey is a pure expression of the Tasmanian wilderness.
Leatherwood Honey
Our happy bees spend summer in the remote, wild forests of the west coast, where the Leatherwood tree (Eucryphia Lucida), explodes with delicate white blooms from December to February.
As the only place in the world these forests exist, Leatherwood honey is world famous and quintessentially Tasmanian. Bees pollinate the golden nectar of Leatherwood flowers to produce a sweet and subtly smoky honey, with hints of spice and a creamy, spreadable texture. Like Manuka honey, Leatherwood honey boasts many health benefits and is sought out for similar medicinal properties.
